時機:必須精準 ,太早破壞結構,太晚則麵糰塌陷。
全靠師傅的指尖觸感和經驗判斷。
📐 懸掛倒吊冷卻(「定形」的關鍵)
困難點:出爐後必須立刻倒插,懸掛在特殊架子上冷卻。
目的:防止內部蒸汽讓組織塌陷,利用重力保持挺拔圓柱形。
風險:平放冷卻或倒吊不足,會導致外觀塌陷、口感盡失。
⏰ 注入餡料與果乾的時機(風味與結構的平衡)
