Caciocavallo [ca-cho-ca-val-lo]
Italian Name: Caciocavallo Affumicato

 

Caciocavallo is a traditional and typical food of southern Italy. The name literally means: "cheese on horseback", it got this name from the manner in which the cheese is always tied together in a rope and dangled over a wooden board to drain and age resulting in the distinctive shape.

 

Our caciocavallo is made with raw free-range cow's milk from the Puglia region of Italy. It has a hard but edible skin however inside is soft. 

 

Continuous aging and exposure to humidity in caves develops the sharp, spicy flavours in Caciocavallo. With persistent aging, the cheese picks up intense, earthy undertones and fruity aromas. Along the way, it turns from a milky white to a darker yellow in colour and becomes more salty. Being a type from the stretched curd cheese family, it has a characteristic springy and stringy texture.

 

Ways to Serve

>Serve with Red Wine. Whisky,, Fruity White Wine.

>With Pears, grapes, figs, Honey

>Grill or bake it until it melts; and pair with bread

>Simply eat it fresh
