Bresaola is air-dried, salted beef that has been aged two or three months. It is lean and tender, with a sweet, aromatic smell. 

It's traditionally served in very thin slices, dressed with a drizzle of extra virgin olive oil and a squeeze of lemon juice. Or have it on some Carasau bread wth a Parmigiano-Reggiano cheese.
 
Once sliced, it dries out quickly so it's best to have it sliced to order.

義式風乾牛肉Bresaola,以純手工的方式,反覆將義大利海鹽、黑胡椒粒、杜松子等香料均勻塗抹上,經過風乾熟化,牛肉呈現有如寶石般的暗紅色,口感軟嫩味道香濃富嚼勁,具備風乾肉品特有的香氣,絕佳的牛肉風味。

傳統會將其切為薄片直接食用,也可拌入生菜,淋上橄欖油與檸檬汁再加些巴薩米克醋,最後撒上帕馬森起司做成沙拉,就成了一道義大利常見的開胃冷盤或下酒良伴。
