原來前幾個星期,佢去咗意大利近拿玻里嘅Amalfi coast,(即係海邊懸崖有彩色屋仔小鎮嗰度)。雖然景色怡人,但係成個旅程都食唔到卡邦尼意粉。佢甚至向餐廳廚師提出可否為佢私人提供卡邦尼意粉,不幸都被拒絕了。
我話:冇計,拿玻里唔係出品卡邦尼意粉嘅地區,羅馬先係!雖然兩者只係一個小時距離,但係食物文化好唔同。
佢話:好唔甘心係意大利一餐carbonara都食唔到,所以之後我去英國嘅時候就嘗試買材料自煮,點知英國都係搵唔到最正宗嘅Guanciale 豬臉頰肉,就連次選嘅Pancetta豬腩肉都搵唔到。
我開始欣賞佢嘅執着🫡🫡🫡🫡🫡
亦明白點解 正宗卡邦尼套裝係我哋長久以來嘅招牌貨。
當我將 Guanciale 交託俾佢嘅時候,我亦分享小小使用嘅貼士,係,每一舊Guanciale我都珍而重之。
後來Gentleman 返到屋企完成咗個菜式,佢將第一次做嘅作品圖片傳送俾我,之後我哋繼續討論呢碟菜式嘅細節⋯
其實營運網店都幾苦㗎,多謝有朋友比我呻。我都有諗過唔做,但係會好可惜,又過唔到自己果關。今日我感受到做「意大利大使」(自稱)嗰份意義♥️ 有點開心🥳

(For 2-4 persons)
Ingredients:
Mascarpone cheese 180g
Thickened cream 200g
Icing sugar 16g
1 egg yolk
Juice of 2-3 oranges
Sponge finger biscuits 100g
Mango 2-3 no.
Vanilla extract
RizzyItalia Italian organic almonds
Steps:
1) Cut mangoes into slices.
2) Squeeze the oranges.
3) In a bowl whisk cream with icing sugar until firm. Add egg yolk, vanilla extract, and mascarpone and mix with a whisker. Keep in the fridge while preparing the finger biscuit.
4) Form the finger biscuit in the desired shape on a plate.
5) Soak finger biscuit with orange juice.
6) Spread a layer of cream. Add a layer of sliced mango on top. Repeat the same for another layer.
7) Sprinkle some chopped almond on top.
8) Decorate the cake in your own creative way. Have fun.
(For 2 persons)
Ingredients:
Chicken fillet 2 pcs
Flour 50g
Egg 1 no.
RizzyItalia caciocavallo cheese 40g
RizzyItalia organic Extravergine olive oil 40g
Salt
Black pepper
Tomato sauce:
Tinned peeled tomatoes 200g
RizzyItalia organic Extravergine olive oil 20g
Garlic
Basil
Steps:
1) Use a knife to cut a pocket into the side of the chicken fillet, season it with little salt and black pepper.
2) Cut caciocavallo cheese in small pieces. Stuff cheese in the fillet pocket.
3) Close the pocket with long sticks or skewers.
4) Open an egg. Soak the fillet in the egg then immediately place it on the flour. Repeat again, soak and put on flour.
5) Heat oil in a frying pan. Add fillet to cook for about 3 minutes each side.
Tomato sauce:
Heat saucepan, add 10g of oil, minced garlic then tinned tomatoes. Simmer with low heat.
Add basil and rest of the oil.

Steps:
1) Crush garlic. Cut caciocavallo in small cubes.
2) Heat 15g of oil in saucepan, add garlic to roast. Add peeled tomatoes and salt. Reduce to low heat to simmer.
3) In the meantime, boil a pot of water for pasta. Add salt and pasta when water is boiled. Cook 1-2 minutes less than indicated on the packet. Strain water away from pasta.
4) Add pasta and mix into tomato sauce. Add cheese into pasta sauce and reduce the heat.
5) Once cheese is melting, add rocket leaves and turn off the heat. Add the rest of the olive oil. Ready to serve.

(For 2 persons)
Ingredients:
Mushroom champignons 400g
Onion ½ pc
Potato 150g
RizzyItalia Extravergine olive oil 30g
RizzyItalia Organic Almonds
Salt
Black pepper
Vegetable broth or water 350g
(Decoration: parsley)
Steps:
1) Cut onion and potato in cubes and slice mushroom. Chop almonds.
2) Add Extravergine oil in a pot, add onion. Fry for a minute then add the mushrooms, salt and pepper.
3) Pour in the vegetable broth/water and cook for 8-10 mins. Put a few of the mushrooms to one side then blend the rest of the mushrooms, onion and potato until smooth. Put in the extra slices of mushroom and chopped almonds. Ready to serve.
Extra Tips!
A piece of toasted bread goes well with the soup.
A light cheese chip can be used to enjoy with the soup!
